Assistant Head Baker - Job SpecificationSalary: £40,000Shifts: 15:30-02:00, 5 days out of 7Reports to: Head Baker We are seeking an experienced Assistant Head Baker to support the leadership of a night‑shift bakery team producing high‑quality breads and viennoiserie. This role requires strong technical skill, excellent organisation, and the ability to maintain exceptional product standards while supporting the Head Baker in day‑to‑day operations. Key ResponsibilitiesFood Production<ul><li>Support the Head Baker in leading a team of night‑shift bakers producing a range of organic breads and viennoiserie.</li><li>Maintain consistently high product quality across all baked goods.</li><li>Contribute to the development and launch of new and seasonal bakery products.</li><li>Oversee the execution of all products to company specifications.</li><li>Ensure all preparation is completed professionally and on time.</li><li>Adhere to organic production standards and certification requirements.</li><li>Adapt to seasonal menu changes and evolving business needs.</li></ul>Operations<ul><li>Deputise for the Head Baker when required.</li><li>Ensure all ingredients are prepared, weighed, and measured accurately for production.</li><li>Supervise the team to ensure all production duties are carried out with care, consistency, and minimal wastage.</li><li>Ensure full compliance with due diligence, traceability, and food safety procedures.</li><li>Monitor workflow to ensure tasks are completed efficiently within set timeframes.</li></ul>Financial &amp; Operational Accuracy<ul><li>Take responsibility for processing daily orders and recipes.</li><li>Work efficiently to ensure daily orders exceed fulfilment targets.</li><li>Minimise wastage through careful oversight and planning.</li><li>Comply with internal audit requirements and production standards.</li><li>Support the Head Baker in meeting annual financial and budgetary targets.</li></ul>People Management<ul><li>Assist in the line management, development, and motivation of the bakery team.</li><li>Support the induction and training of new team members.</li><li>Communicate effectively with the team regarding recipe changes, procedures, and operational updates.</li><li>Liaise with internal teams and customers regarding quality issues or shortages within required timescales.</li></ul>Performance Targets<ul><li>Order fulfilment above 98%</li><li>Wastage levels below budget</li><li>Achievement of national/international product awards</li><li>Customer review scores above 3.8</li><li>Successful external audits and accreditation passes</li><li>Maintenance of pest control standards</li><li>Sales performance above budget</li><li>EBITDA performance above budget</li><li>Zero product recalls</li></ul> Blue Arrow is proud to be a Disability Confident Employer and is committed to helping find great work opportunities for great people.
