JOB TITLE Assistant F&B Manager
REPORTING TO F&B Manager
KEY CONTACTS Directors, Senior Management, staff, suppliers, customers.
JOB PURPOSE Supporting the F&B Manager and Events Manager for the operational management and profitability of the Clubhouse, banqueting, weddings and events. Leading the front-of-house teams forward to achieve the highest levels of customer service whilst identifying income streams, driving sale, managing costs and managing staff and rotas.
Ensure strict compliance with all statutory and regulatory requirements in respect of customers and staffing.
PRINCIPAL DUTIES AND RESPONSIBILITIES
Management
- As an experienced assistant F&B manager you will drive catering profit margins, turnover and staffing ratios. To deliver and follow, the annual budget projections and outcomes.
- The Assistant F&B Manager will demonstrate the drive and enthusiasm to lead and inspire several teams to achieve the best possible standards and performance.
- To be co responsible with all cash handling, reporting and training of the team to minimize errors and controlling losses.
- Deliver on KPIs and input into future development of the department.
- Add input into development growth areas for the catering side of the business.
- Working in close collaboration with the F&B Manager as part of a Senior Leadership Team for day-to-day operations to ensure a 'one site' approach.
- To have aspirations to understand all aspects of the business so that you can multi skill and step into other areas when needed.
Operational
- Have operational control of the Clubhouse, Banqueting and events ensuring optimised occupancy and usage for all areas in the F&B department in the absence of the F&B Manager.
- To support F&B Manager in stock management and liquor operations liaising with suppliers, ensuring the best possible purchasing price and quality for the Business. To be innovative thinking of new product ideas and revenue streams.
- Ensuring catering and service standards are maintained and delivered through the Clubhouse and to high volume events.
- Ensure strict compliance with all statutory and regulatory requirements in respect of customers and staffing.
- Ensure the clubhouse is presented to the highest standards at all times even when events are not booked (the show around principle). Bring forward standards improvements such as painting, cleaning, decoration etc. The same with team presentation including uniform and professionalism.
People Development
- On-boarding of new staff members and daily management of HR software.
- Training and development of staff members in both service standards training and H&S compliance.
- Influence all those who work around them will be essential in order to maximise profitability and provide excellent levels of customer service consistently.
- Day to day operational staff management including populating rotas, organising shift patterns and management of staff costs using the HR software.
- Holding regular team meetings, keeping staff informed of company activities, expectations, and performance.
- To undertake any broadly analogous duties as reasonably requested.
QUALIFICATIONS AND TRAINING
Essential attributes
- Minimum of 3 - 5 years' operational experience in F&B management.
- Experience will have been gained in a comparable establishments.
- Strong financial acumen. Experienced in managing a P&L.
- An understanding in populating and delivering financial budgets and regular management information
- Demonstrable Entrepreneurial spirit with a track record of successful end to end project delivery.
- Exceptional interpersonal and relationship-building skills
- Professional conduct and effective communication skills across all mediums.
- An inspirational and strong leader. Able to set direction, the vision, expectations and motivate staff to achieve these through performance management and development.
- Previous experience of managing concurrent multi-skill teams
- Hands on, enthusiastic and ambitious
- Flexible approach to work and working hours
- Understanding and compliance with, hygiene, health and safety requirements
- Experience dealing with the public and customer complaints
