Head Chef - Premium Golf & Leisure Venue (Hampshire)
Salary: £40,000-£41,000 starting | £45,000 after 6 months
Hours: 45 per week | Straight shifts | 5 days on / 2 off
A well-established golf and leisure venue in the Hampshire area is seeking a hands-on, experienced Head Chef to step into a pivotal leadership role within its busy, diverse, and fast-evolving kitchen operation. This is an urgent, high-impact appointment following the departure of a long-standing senior team member.
The Opportunity
Over the past few years, the business has invested heavily in rebuilding and stabilising its kitchen team. With the recent resignation of a key second-in-command, we're now looking for a strong kitchen leader who can step in confidently, maintain momentum, and help drive the next stage of growth.
You'll act as the senior figure in the kitchen when the manager is off-site, playing a major role in shaping standards, culture, and consistency.
The Role
Position: Head Chef
Start: ASAP (ideally within 4 weeks)
Shifts: Straight shifts (e.g., 6-3 or 12-9/10)
Benefits:
- 28 days holiday
- Small tronc (£30-£60/month)
- Free parking
- Supportive management team
- Clear progression pathway
This is a role for someone who thrives in varied, seasonal, high-volume environments-from weddings and events to traditional golf club dining and terrace service.
The Operation
Expect a dynamic mix of service styles and fluctuating volumes:
- Golfers: ~70 covers on busy days
- Weddings & events: ~70 guests
- Terrace dining: Up to 100 covers
- Hotel residents: ~14 guests
- Quiet days: Sometimes minimal trade
You'll have the freedom to bring creativity to events while maintaining consistency across everyday service.
Candidate Profile
We're looking for a chef who can hit the ground running mid-season and lead with confidence, calmness, and clarity.
Essential qualities:
- Proven team leader able to run the kitchen independently
- Strong background in high-volume, mixed-service environments
- Experience working to Rosette-level standards (Michelin not required)
- Excellent staff management and communication skills
- Calm under pressure, adaptable, and team-focused
- Must drive (no live-in accommodation available)
Ideal profile:
- Ambitious and ready to step into a full Head Chef role within 2-3 years
Logistics & Interview Process
- Driving essential
- In-person interviews only (20-30 minutes + site tour)
- Trial shift required
- Interview availability: flexible next week
