The Role
We are seeking a skilled and ambitious Sous Chef to join our talented 6‑chef brigade. You will work closely with the Head Chef to deliver consistently high‑quality dishes, support menu development, and ensure the smooth running of the kitchen across all services.
This is an exciting role for a chef with fine‑dining experience who wants to take the next step in their career within a supportive and creative environment.
Key Responsibilities
- Prepare and cook dishes to a high fine‑dining standard using fresh, seasonal ingredients.
- Assist the Head Chef with menu development, specials, and costing.
- Support the delivery of popular afternoon teas with high‑quality patisserie and savoury items.
- Lead the kitchen in the absence of the Head Chef, ensuring smooth service and strong communication.
- Maintain high standards of kitchen hygiene, safety, and organisation.
- Train, mentor, and support junior members of the brigade.
- Contribute to the overall creativity and direction of the food offering.
What We're Looking For
- Strong background in fine dining, boutique hotels, or high‑end restaurants.
- Confident cooking across all sections with excellent attention to detail.
- Ability to thrive in a busy service while maintaining calm, quality, and control.
- Capable of leading and motivating a small team when required.
- Passion for fresh, seasonal produce and modern British cuisine.
- Flexible to work early, split, or late shifts on a 5/7 rota.
