Roles & Responsibilities
As Commis Chef you will have:
* Basic knowledge of all sections (larder/starters, garnish, meat and fish, sauce, desserts)
* Ability to produce good quality basic food and good knife skills
* Understanding of health and safety
* Understanding of basic food hygiene practices
* Excellent communication skills
* Strong team player qualities and basic team management skills
* Good multi-tasking skills and an understanding of prioritising tasks and personal time management
* Good level of numeracy and the ability to multiply and carefully follow recipes
As Commis Chef you will be/have:
* Enthusiasm to develop your own skills and knowledge plus those around you
* Adaptability to change and willingness to embrace new ideas and processes
* Ability to work unsupervised and deliver quality work
* Positive and approachable manner
* High level of attention to detail
* Have a lot of stamina, be able to learn on their feet and be passionate about food as they can be cooking in a high-pressure kitchen
* Versatile and flexible as you may be working in all sections of the kitchen - fish, pastry, butchery and so on

* Good listening skills and the ability to follow instructions
* Reliable, quick thinking, a creative person
* Ability to work well under pressure
Main Duties/Responsibilities
As Commis Chef you will:
* Prepare vegetables, meats and fish with guidance from senior chefs
* Ensure ingredients and preparation is ready for service for more senior Chefs
* Measure/weigh dish ingredients and portion sizes accurately
* Deal with deliveries and stock rotation
* Assist other section chefs during service
* Cook and prepare elements of high-quality dishes with guidance
* Help with deliveries and restocking
* Contribute to maintaining kitchen and food safety standards
* Cleaning stations and kitchen equipment throughout the day and at the end of service
Qualifications/Licences/Certifications
Essential
* Experience in preparing food and assisting senior Chefs and
* Experience working well in a team and communicating with the other members of staff
* Basic cooking skills
* Food Hygiene Level One
* Level 1 and 2 Food Safety Awards
* Minimum 6 months relevant experience
* Awareness of manual handling techniques
* Awareness of Control of Substances Hazardous to Health Regulations (COSHH) and chemical safety
* Experience of kitchen equipment
* Experience of dangerous equipment such as knives
* Competent level of English spoken and written
* DBS
Desired
* Food Hygiene Level Two
* City & Guilds 706/1 Catering
* NVQ Level 1
* Level 2 Health and Safety in the Workplace Award
* Level 3 Food Safety Awards
* NVQ or SVQ in food preparation and cooking
* 14-19 Hospitality & Catering diploma
* BTEC HND in professional cookery
* A foundation degree in culinary arts
