Role Overview:
I am currently recruiting an Sous Chef to join a fabulous four-star hotel, Gold & Spa resort based near Bicester. This is a great opportunity for somebody who likes to get stuck in, who can work well in a team as well as independently, and has great attention to detail.
Main Duties and Responsibilities as a Sous Chef:

  • Placing orders ensuring that the requirements of weekly functions is checked
  • In the absence of the Executive Head Chef to pay attention to current rota's ensuring that adequate staff are scheduled to work according to the business demands with consideration being given to peak periods and strengths and weaknesses of individual staff
  • Receiving and ensuring correct deliveries are made
  • Planning the preparation of weekly functions
  • Delegating preparation of jobs and following up to ensure everything is ready for functions and up to Company standards
  • Keeping the Health & Safety log book updated by recording the temperature of fridges, batch preparation and spot check prepared dishes prior to leaving the pass
  • Ensuring relevant hygiene and Health & Safety standards are maintained within the kitchen, in line with the company HACCP document
  • Jointly responsible for preparing kitchen cleaning rotas, supervising cleaning schedules and signing off on a weekly basis
  • Follow recipes during service preparation and batch cooking
  • Monitor the production and execution of dishes by other Chefs whilst on your shift, ensuring the correct standard is reached at all times
  • Ensures consistency in the quality of food produced and served is maintained at all times
  • Following recipes to the letter to maintain cost control therefore maximising profit margins and to cost any specials to be sold on the specials board / menu
  • During quiet times ensure that the time is used to prepare the kitchen for the following shift by filling up as many stations as possible and carrying out cleaning duties
  • To be pro-active at all times whilst on duty
  • In the absence of the Executive Head Chef preparing monthly payroll
  • Delivery of staff Training for all new and existing staff members
  • Responsible for the continuing development of Commis Chefs and Chef de Parties

What You Need to Be a Successful Sous Chef

  • food hygiene level 2
  • Proven experience as a Chef in delivering exceptional dishes in a time pressured environment, taking responsibility for the quality of each and every dish served.
  • Wedding and event experience are a must
  • Exceptional proven ability of kitchen management
  • A can-do attitude
  • Ability in dividing responsibilities and monitoring progress
  • Be able to priorities task and have good time management
  • Up-to-date with culinary trends and optimised kitchen processes
  • A confident, self-motivated, driven and professional person
  • Excellent management skills and financial understanding
  • Outstanding communication and leadership skills
  • Credentials in health and safety training
  • Culinary science related certificates
