The Sous Chef will be responsible for;
  • Ensuring the smooth running of the kitchen operations.
  • Understanding and implementing stock controls.
  • Being a great communicator with a skill of communicating with all other departments.
  • Being guest focused at all times, showing willingness to be flexible & fit in with the business and event requirements.
  • Assist the Executive & Head Chef in menu writing, planning & being proactive in assessing current industry trends and initiatives.
  • Make sure standards of food and service are executed to the highest standard at all times.
  • Taking control of the kitchen in the absence of the Executive & Head chef.
  • Placing orders for stock as and when necessary in conjunction with the head chef.
  • Ensuring all financial aspects of the kitchen management are carried out, in particular carry out all costings and checking they are within the budget levels.
  • Controlling food wastage and shrinkage
  • Maintaining the highest levels of food hygiene and health and safety at all times.
  • Setting a professional standard of conduct to achieve the highest standards of customer care.
  • Working with Executive & Head chef, assisting in the recruitment of staff.
  • Ensuring every new starter in the kitchen follows a comprehensive induction plan in their first 3months.
  • Supporting and monitoring the training and development of all staff in kitchen.
